Species evolve to better adapt to their environment.  It's an opportunistic thing.

If there's no new niche available, species may not continue to evolve until a new one becomes available.  

In any case, the evolution takes thousands of generations so you won't see any perceptible changes in your lifetime (unless you live to be at least 50,000 years old).
